Beyond Traditional Cuisines

The Canadian food habit strongly heralds the cultural as well as the geographical diversity that exists in this vast country. The favorite foods of Canadians vary slightly from region to region, and are strongly influenced by their family heritage, which carry hints of the colonial influences of England and France on the country. Generally, the traditional Canadian food of English Canada is closely related to British and American cuisine, while the traditional cuisine of French Canada has evolved from French cuisine.
Modern Canadian cooking represents these diverse origins as well as the many other immigrant cultures. It is the fusion of modern culinary techniques and uniquely Canadian ingredients, such as wild blueberries and Saskatoon berries, fiddleheads, mussels, caribou, bison, salmon, wild rice, maple syrup etc. Food Beverage Canada, based in Edmonton, Alberta, was founded in 1994 with a mandate to unite the international marketing efforts of the food processing industry of Canada to expand its export markets, or solidify Canada's presence in a current market.
